Ingredients

  • 20 oz. can Dole pineapple tidbits
  • 1 package vanilla pudding and pie filling
  • 1 package lemon flavor gelatin
  • 4 oz. carton nondairy whipped topping
  • 2 cups vanilla cookie crumbs

Instructions

  1. Drain pineapple and reserve juice.
  2. Add water to the pineapple juice to make 2 cups of liquid.
  3. Combine pudding mix, lemon gelatin, and the measured liquid in a medium saucepan.
  4. Cook, stirring, over medium heat until the mixture comes to a full boil.
  5. Pour the mixture into a bowl and chill until thickened.
  6. Fold the thawed nondairy whipped topping into the thickened pudding mixture.
  7. Sprinkle vanilla cookie crumbs over the top before serving if desired.
