Creme a Rhum is a luscious, creamy dessert infused with orange, lemon, and rum flavors, perfect for elegant gatherings or special occasions.

Ingredients

  • 1 1/4 cups sugar
  • 6 egg yolks
  • 1 envelope gelatin
  • pinch of salt
  • 1 cup orange juice
  • 1/2 cup white wine
  • 1/4 cup cold water
  • 1/4 cup lemon juice
  • 3 to 4 tablespoons rum
  • 2/3 cup cream, whipped

Instructions

  1. Combine in a double boiler the sugar, fruit juices, egg yolks, wine, and rum.
  2. Place over heat and beat continuously with an eggbeater until foamy and thickened.
  3. Remove from the heat and add the gelatin which has been softened in the cold water.
  4. Cool until it is syrupy.
  5. Fold in the whipped cream.
  6. Pour into a well-oiled quart mold and chill for at least 3 hours.
  7. Serve with a small dish of whipped cream.
