- Preheat the oven and prepare a water bath for baking the custard.
- Split the vanilla bean lengthwise and scrape the seeds into a mixture of half and half and heavy cream.
- Add the vanilla bean pod to the cream mixture and heat until just simmering. Remove from heat and let steep for 15 minutes.
- In a bowl, whisk together eggs and egg yolks with sugar until well combined.
- Remove the vanilla bean pod from the cream and slowly pour the warm cream into the egg mixture, whisking constantly.
- Pour the custard mixture into ramekins and place them in a baking dish with hot water halfway up the sides.
- Bake until the custards are just set, about 40-45 minutes. Remove from oven and cool.
- Chill the custards in the refrigerator for at least 2 hours.
- Sprinkle a thin layer of sugar over each custard and caramelize with a blow torch until golden and crispy.
