Ingredients

  • 2 1/4 cups sugar
  • 4 1/2 cups half and half cream
  • 1 1/2 cups heavy cream
  • 3-inch piece vanilla bean
  • 7 large eggs
  • 6 large egg yolks

Instructions

  1. Preheat the oven and prepare a water bath for baking the custard.
  2. Split the vanilla bean lengthwise and scrape the seeds into a mixture of half and half and heavy cream.
  3. Add the vanilla bean pod to the cream mixture and heat until just simmering. Remove from heat and let steep for 15 minutes.
  4. In a bowl, whisk together eggs and egg yolks with sugar until well combined.
  5. Remove the vanilla bean pod from the cream and slowly pour the warm cream into the egg mixture, whisking constantly.
  6. Pour the custard mixture into ramekins and place them in a baking dish with hot water halfway up the sides.
  7. Bake until the custards are just set, about 40-45 minutes. Remove from oven and cool.
  8. Chill the custards in the refrigerator for at least 2 hours.
  9. Sprinkle a thin layer of sugar over each custard and caramelize with a blow torch until golden and crispy.
