Ingredients

  • 1/4 cup unsalted butter
  • 3/4 cup sugar
  • 2 ripe medium bananas
  • 1 cup unbleached flour
  • 1 teaspoon baking powder
  • 1/2 cup egg substitute or 2 whole eggs
  • 12 ripe prune plums
  • 1/2 lemon

Instructions

  1. Preheat the oven and prepare the baking dish.
  2. Cream the unsalted butter and sugar together.
  3. Add the broken banana chunks and mix well.
  4. In a separate bowl, sift the unbleached flour and baking powder.
  5. Gradually add the flour mixture to the wet ingredients, alternating with egg substitute or eggs, mixing until just combined.
  6. Halve and pit the ripe prune plums and arrange them on top of the batter in the baking dish.
  7. Squeeze half a lemon over the plums.
  8. Bake until the cake is golden and a toothpick inserted into the center comes out clean.
