Ingredients

  • 1 envelope onion soup mix
  • 1/2 cup vegetable oil
  • 1/4 cup margarine, melted
  • 1 teaspoon thyme (optional)
  • 1 teaspoon marjoram (optional)
  • 1/4 teaspoon pepper
  • 2 pounds potatoes, cut into quarters

Instructions

  1. Preheat oven to 450°F.
  2. In a shallow baking pan, thoroughly blend onion soup mix, vegetable oil, melted margarine, thyme (if using), marjoram (if using), and pepper.
  3. Add potatoes to the mixture and coat thoroughly.
  4. Bake, stirring potatoes occasionally, for 60 minutes or until potatoes are tender and golden brown.
  5. Garnish with chopped parsley, if desired.
