Ingredients

  • 4 whole catfish
  • 1/2 cup butter or margarine, melted
  • 3/4 cup finely crushed cracker crumbs
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon celery salt

Instructions

  1. Rinse the catfish in cold water and pat very dry with paper towels.
  2. Mix together the cracker crumbs and seasonings; place in a shallow bowl.
  3. Dip each fish in melted butter or margarine, then roll in seasoned crumbs.
  4. Place the fish on an oiled rack 4 inches above hot coals.
  5. Cook for 8 to 10 minutes per side, turning once gently.
  6. Serve immediately.
