Crispy Cornmeal Scones

Ingredients

  • 2 cups flour
  • 1 cup yellow cornmeal
  • 2 tsp. sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shredded butter
  • 1 cup buttermilk

Instructions

  1. Preheat oven 425
  2. Combine flour, cornmeal, sugar and baking powder and salt.
  3. Add butter shredded with a vegetable shredder
  4. And mix to distribute
  5. Make well in flour mixture and add 1 cup buttermilk
  6. Stir with spoon till moistened and do not overmix
  7. If it seems dry, add a tbsp of buttermilk
  8. Put on a floured surface and fold four or five times on itself; turning a quarter turn each time
  9. Make into 8 inch square 3/4 inch thick and cut into 1 1/2 to 2 inch squares.
  10. Place one inch apart on ungreased baking sheet and brush with butter milk.
  11. Bake for 12-15 min. or till lightly brown.
