Crispy cucumber salad offers a refreshing mix of crunchy cucumbers, green peppers, and onions, dressed with a sweet and tangy vinegar-sugar glaze, perfect for summer gatherings.

Ingredients

  • 12 cucumbers, thinly sliced
  • 2 or 3 green peppers
  • 3 medium onions, cut into rings
  • 2 Tbsp salt
  • 2 trays of ice
  • 2 cups sugar

Instructions

  1. Mix cucumbers, green peppers, onions, salt, and ice in a large bowl.
  2. Let the mixture set for 2 hours.
  3. In a separate bowl, mix sugar and vinegar.
  4. Heat the vinegar and sugar mixture, but do not boil. Cool before pouring over the vegetable mixture.
  5. Refrigerate and let set overnight before serving.
