Ingredients

  • 2 1/2 cups finely crushed potato chips
  • 2 tablespoons chopped parsley
  • 1/4 cup lemon juice
  • 1 pound fish fillets
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise

Instructions

  1. Preheat oven to 400°F.
  2. Combine crushed potato chips, grated Parmesan cheese, and chopped parsley in a bowl.
  3. In a small bowl, mix mayonnaise with 2 tablespoons of lemon juice.
  4. Dip each fish fillet in remaining lemon juice, then coat with mayonnaise mixture, and finally dredge in the chip mixture.

  7. Refrigerate leftovers.
