Ingredients

  • green tomatoes
  • stone ground cornmeal
  • 1/2 cayenne or other hot pepper, seeded and diced
  • olive oil

Instructions

  1. Cut the green tomatoes into 1/2-inch slices.
  2. Dip each tomato slice into cornmeal, ensuring both sides are well coated.
  3. Heat enough olive oil in a large frying pan to just cover the bottom.
  4. Add the diced hot pepper to the oil, then quickly fry the tomato slices until just crisp on the outside, about one to two minutes per side.
  5. Remove the fried tomatoes to paper towels to absorb excess oil.
  6. Serve immediately.
