Ingredients

  • 1 large can pineapple juice
  • 1/2 cup lemon juice
  • 1 (3 oz.) package strawberry Jell-O
  • 5 cups boiling water, divided
  • 2 cups sugar
  • 1/2 oz. almond extract
  • 2 quarts ginger ale

Instructions

  1. Mix pineapple juice and lemon juice together and set aside.
  2. Dissolve the strawberry Jell-O in 2 cups of boiling water.
  3. Cook sugar with 3 cups of boiling water until the syrup turns clear.
  4. Add the Jell-O mixture to the syrup and stir well.
  5. Pour in the pineapple-lemon juice mixture and mix thoroughly.
  6. Add almond extract last and stir to combine.
  7. Chill the mixture before serving and then carefully fold in the ginger ale.
