Ingredients

  • 1 Tbsp. shortening
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 1 c. boiling water
  • 1 c. cold water
  • 1 cake compressed yeast or 1 pkg. dry yeast
  • 5 1/2 to 6 c. flour, sifted

Instructions

  1. Combine shortening, salt, and sugar in a large bowl.
  2. Add boiling water and cold water; cool to lukewarm.
  3. Blend yeast as directed on the package.
  4. Add yeast to the mixture.
  5. Gradually add sifted flour, mixing until well blended.
  6. Knead on a lightly floured board for 5 minutes.
  7. Place dough in a greased bowl and cover; let rise until doubled in size.
  8. Shape the dough into long oblong loaves and place on a greased baking sheet.
  9. Let the loaves rise until double in size.
  10. Brush the dough with slightly beaten egg white.
  11. Cut the top of the dough diagonally across the top three times.
  12. Bake at 425°F for 30 minutes, then reduce heat to 350°F and bake for an additional 30 minutes.
