Spanish Liver combines tender liver with savory onions, green peppers, and seasoned rice, creating a hearty dish full of bold flavors perfect for a comforting meal.

Ingredients

  • 2 Tbsp. oil
  • 4 medium size onions
  • 1/2 c. uncooked rice
  • salt and pepper
  • 1/2 c. flour
  • 1 lb. liver
  • 1 green pepper

Instructions

  1. Preheat the oven.
  2. Put oil in a skillet.
  3. Roll the liver in flour and place it in the skillet.
  4. Brown the liver, turning several times.
  5. Remove the liver from the skillet.
  6. Add onions and green pepper to the skillet and let them brown slightly.
  7. Add washed rice, tomatoes, liver, and chili powder to the skillet.
  8. Season with salt and pepper to taste.
  9. Cover the skillet.
  10. Place in the oven, turn the heat to low, and cook for 45 minutes.
