Cucumber Freeze is a refreshing, sweet and tangy cucumber relish with onions, perfect for summer snacking or as a unique condiment for grilled dishes.

Ingredients

  • 2 quarts cucumbers (about 5 medium)
  • 2 medium onions
  • 1/2 cup salt
  • 1 gallon water
  • 1 1/2 cups sugar
  • 1/2 cup vinegar
  • celery seed

Instructions

  1. Soak cucumbers and onions in salt water for 2 hours (1/2 cup salt to 1 gallon water or 3 quarts).
  2. Drain; rinse.
  3. Boil sugar, vinegar, and celery seed.
  4. Cool slightly.
  5. Pour the mixture over the cucumbers and onions. Mix well.
  6. Freeze for 5 days.
