Ingredients

  • 2 medium cucumbers
  • 1/2 cup sour cream
  • 2 teaspoons vinegar
  • 1 teaspoon salt
  • 1 tablespoon chopped onion
  • 1/8 teaspoon coarse black pepper
  • 1 package lime gelatin
  • 1 cup boiling water
  • 3/4 cup cold water

Instructions

  1. Peel and coarsely grate the cucumbers.
  2. Wrap the grated cucumbers in a paper towel and squeeze gently to remove all juice.
  3. Dissolve the lime gelatin and salt in boiling water.
  4. Add cold water and vinegar to the gelatin mixture.
  5. Fold in the sour cream and chill the mixture until it thickens.
  6. Fold in the prepared cucumbers, chopped onion, and black pepper.
  7. Pour the mixture into a greased mold and chill until firm.
  8. Serve chilled.
