Delightful cherry tomatoes filled with a creamy cucumber mixture seasoned with curry, perfect as an appetizer or fresh snack for gatherings and parties.

Ingredients

  • 2 pt. cherry tomatoes
  • 2 (3 oz.) packages cream cheese, softened
  • 1 cup shredded cucumber, well drained
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon garlic salt
  • cucumber wedges

Instructions

  1. Cut the tops off each cherry tomato and scoop out the pulp.
  2. Invert the tomatoes onto paper towels and let stand for 30 minutes to drain.
  3. In a bowl, combine the softened cream cheese, shredded cucumber, curry powder, and garlic salt.
  4. Beat the mixture until well blended and smooth.
  5. Spoon the cream cheese mixture into the prepared tomato shells.
  6. Garnish each tomato with a cucumber wedge by placing the pointed end into the filling.
