Ingredients

  • 1 cup lentils
  • 3 cups water
  • 1 chopped onion
  • 1 garlic glove, minced
  • 1 bay leaf
  • 1/8 teaspoon thyme
  • salt to taste
  • 1 tablespoon butter
  • 6 eggs
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Butter a souffle dish.
  2. Put eggs, cream, Parmesan cheese, mustard, salt, and pepper in a blender or food processor.
  3. Whirl until smooth.
  4. Cut Cheddar and cream cheese into pieces and add to the mixture.
  5. Whirl until smooth and thick.
  6. Pour the mixture into the prepared dish.
  7. Bake in a 375°F (190°C) oven for 45 minutes for a soft, liquidy center or 50 minutes for a firm souffle.
