Ingredients

  • 1 1/2 lb. fresh broccoli
  • 3/4 lb. fresh mushrooms, washed and thinly sliced
  • 6 Tbsp. unsalted butter
  • salt and pepper
  • 1 1/2 oz. pimentos, diced
  • 1 1/2 cloves garlic, minced
  • 1 1/2 oz. Parmesan cheese
  • 1 1/2 Tbsp. salt

Instructions

  1. Clean and cut broccoli into portions. Set aside.
  2. Bring a saucepan of water to a boil, add salt and baking soda, then immerse the broccoli and poach for 5 minutes.
  3. Remove broccoli and drain.
  4. Heat butter in a skillet and sauté garlic and sliced mushrooms until tender.
  5. Add the broccoli to the skillet and toss until well coated with butter.
  6. Sprinkle with Parmesan cheese, salt, and pepper to taste.
