Curried Fall-Fruit Compote
Ingredients
- 1/3 c chopped onion ⓘ
- 4 Tbsp beef or chicken broth ⓘ
- 1 tsp curry powder ⓘ
- 1/2 tsp ground cumin ⓘ
- 1 pear, peeled, cored and chopped ⓘ
- 1 Granny Smith apple, peeled, cored and chopped ⓘ
- 1 Red Delicious apple, peeled, cored and chopped ⓘ
- 2 dried apricots, cut up and soaked 20 minutes in 2 Tbsp apricot or other fruit-flavored brandy or orange juice ⓘ
- 1/4 c golden raisins ⓘ
Instructions
- In a large saucepan over medium heat simmer onion in 2 Tbsp broth until limp. Add curry powder and cumin. Stir over medium-high heat about 15 seconds. Add remaining ingredients, including the brandy.
- Cover and
- cook over low heat 20 minutes until fruits are tender and flavors blended. Serve hot. Makes 4 servings.
