Ingredients

  • 2 lb goat meat
  • 4 Tbsp cooking oil
  • 3 to 4 cloves garlic
  • 1 large onion
  • 2 tsp salt
  • 1 Tbsp ground black pepper
  • 6 Tbsp flour
  • curry powder

Instructions

  1. Mix salt, black pepper, and flour together.
  2. Dredge pieces of goat meat in the flour mixture and shake off excess.
  3. Heat oil in a skillet over medium heat.
  4. Chop onion and garlic, then brown in the skillet until transparent.
  5. Remove onion and garlic with a slotted spoon and place in a Dutch oven or suitable stew pot.
  6. Add goat meat to the skillet and brown on all sides.
  7. Add the browned meat to the stew pot with garlic and onion.
  8. Deglaze the skillet with 3 tablespoons of wine vinegar or 1/4 cup red wine, then pour into the stew pot.
  9. Add water to the stew pot to cover the ingredients.
  10. Simmer slowly until the meat is tender, about 1.5 to 2 hours.
  11. Stir in curry powder to taste before serving.
