Ingredients

  • 1 cup sugar
  • 2 tablespoons flour
  • 2 tablespoons shortening
  • 2 egg yolks
  • 2 egg whites
  • 1 lemon (juice and a little rind)

Instructions

  1. Beat sugar, flour, shortening, lemon juice, and lemon rind together to form a creamy mixture.
  2. Add egg yolks and continue beating until well combined.
  3. Gently fold in beaten egg whites that have been mixed with 1/4 teaspoon salt.
  4. Pour the mixture into a baking dish.
  5. Place the baking dish in a larger dish filled with hot water to create a water bath.
  6. Bake in a moderate oven at 350°F (175°C) for 30 minutes or until set.
