Ingredients

  • 1 quart milk
  • 4 eggs
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • crushed pineapple (optional)

Instructions

  1. Scald the milk in a double boiler.
  2. Beat the egg yolks separately.
  3. Add sugar and salt to the egg yolks and stir well.
  4. Gradually add the hot milk to the egg yolk mixture, stirring constantly.
  5. Return the mixture to the double boiler and cook until thickened, stirring constantly.
  6. Beat the egg whites until stiff peaks form.
  7. Fold the beaten egg whites into the thickened custard.
  8. Pour into serving dishes and chill until cold.
  9. Optionally, serve with crushed pineapple on top.
