Ingredients

  • 1 small pkg. lemon gelatin
  • 1 small pkg. lime gelatin
  • 1 small pkg. orange gelatin
  • 1 small pkg. strawberry gelatin
  • 1 pt. whipping cream
  • 1 c. pineapple juice

Instructions

  1. Prepare orange, lime and strawberry gelatin separately in 1 1/2 cups hot water and put in 3 separate shallow pans to gel.
  2. Dissolve lemon gelatin in 1 cup hot pineapple juice and 1/2 cup sugar. Let cool until slightly thickened.
  3. Whip the cream and add vanilla. Fold into the lemon mixture.
  4. Cut the 3 trays of gelatin into cubes and fold them gently into the lemon mixture.
  5. Line pie pans with vanilla wafers.
  6. Pour in the mixture and refrigerate.

Tips & Substitutions

For a more vibrant look, consider adding fresh fruit pieces like berries or kiwi into the gelatin cubes before folding them into the lemon mixture. If you prefer a less sweet dessert, reduce the sugar in the lemon gelatin mixture or use unsweetened whipped cream. You can also try substituting the vanilla wafers with graham crackers for a different flavor profile.

Serving Suggestions

Serve the Cut Glass Dessert chilled, garnished with a dollop of whipped cream and a sprinkle of fresh fruit for added color and flavor. This dessert pairs beautifully with Quick And Easy Caesar Salad for a light meal. For a complete experience, consider serving it alongside a refreshing drink like iced tea or lemonade.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To maintain the texture, do not freeze the dessert, as the gelatin may separate upon thawing. Serve chilled directly from the fridge for the best taste and texture.
