Ingredients

  • 1 pkg. apricots
  • 3/4 cup sugar
  • 1/4 teaspoon lemon juice
  • 2 cups water
  • pastry for 2 crusts

Instructions

  1. Cut up apricots.
  2. Put apricots in a saucepan, adding sugar, lemon juice, and water.
  3. Bring to a boil, stirring constantly.
  4. Boil until mixture thickens.
  5. Pour the apricot filling into an unbaked pie shell.
  6. Cover with fluted crust.
  7. Bake at 425°F for 30 minutes or until crust is lightly browned.
  8. Cool before serving.
