Dakota Eggs

Ingredients

  • 1/2 lb. unsliced bacon, cubed
  • 2 c. fresh corn kernels
  • 3 eggs, beaten
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. Fry bacon cubes in a skillet until brown and crisp.
  2. Pour off all but 2 tablespoons of bacon drippings.
  3. In a bowl, beat together eggs and corn.
  4. Add salt and pepper.
  5. Pour mixture over bacon cubes and cook until eggs are set and lightly browned underneath.
