Ingredients

  • 1 large red cabbage, cored and thinly sliced
  • 2 Tbsp. fat (raw goose fat, salt pork or bacon fat)
  • 1/2 cup wine vinegar or cider vinegar
  • 2 to 3 apples, peeled and finely chopped
  • 5 to 6 allspice berries
  • 1 scant tsp. salt
  • 2 to 3 Tbsp. sugar
  • handful of raisins (optional)

Instructions

  1. Put the sliced cabbage in a heavy, porcelain-lined iron pot with the wine or cider vinegar and add the fat.
  2. Carefully bring the mixture to a boil.
  3. Add a little water if necessary to keep it from sticking or burning.
  4. Add the peeled and finely chopped apples, allspice berries, salt, sugar, and raisins if using.
  5. Cook until the cabbage is tender and juicy but not soupy, tasting and adjusting salt as needed.
