Date And Lemon Bars
Ingredients

- 1 1/2 cups pitted dates, chopped coarsely ⓘ
- 1/2 cup sugar ⓘ
- 1/3 cup lemon juice ⓘ
- None None FOR THE CRUMBLE
- 2 cups flour ⓘ
- 10 tbsp (1 1/4 sticks) butter, chopped ⓘ
- 1/2 tsp vanilla extract ⓘ
- 1 tsp finely grated lemon peel ⓘ
- 1 None egg, lightly beaten ⓘ
- 3/4 cup sugar ⓘ
- 3/4 cup flaked coconut ⓘ
Instructions
- For the filling, combine the dates, sugar and 2/3 cup water in a medium saucepan. Bring to a boil then boil, stirring, for about 3 mins or until the dates are pulpy. Stir in the lemon juice and allow to cool.
- Preheat the oven to 350°F. Grease a 12 x 8-inch baking pan; line the bottom with parchment paper.
- For the crumble, sift flour into a large bowl. Rub in butter with fingertips. Stir in the combined vanilla, lemon peel and egg. Stir in sugar, coconut and walnuts and mix well.
- Press half of the crumble mixture firmly into bottom of the prepared pan. Spread filling over the crust. Sprinkle with remaining crumble mixture.
- Bake for about 35 mins or until browned. Cool in the pan on a wire rack.
