Ingredients

  • 1 cup dates or raisins
  • 1/2 cup water
  • 1 cup apple, shredded, unpeeled
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 cups rolled oats
  • 1/2 cup coconut

Instructions

  1. Heat dates and water in a saucepan until soft, then mash together; if using raisins, skip this step.
  2. Mix the mashed dates or raisins with shredded apple, salt, vanilla, rolled oats, and coconut until well combined.
  3. Let the mixture sit until the ingredients stick together and are easy to shape.
  4. Drop spoonfuls of the mixture onto a sprayed cookie sheet, shaping as desired.
  5. Bake at 375°F (190°C) for 25 minutes or until golden brown.
