Ingredients

  • 1/4 lb butter
  • 1/2 cup chopped dates
  • 1 egg yolk
  • 1/2 lb broken cookies (Pepperidge Farm vanilla goldfish)
  • a pinch of salt

Instructions

  1. Melt butter in a saucepan.
  2. Add chopped dates, sugar, salt, and beaten egg yolk; simmer for 8 minutes.
  3. Add broken-up cookies and stir well.
  4. Roll the mixture flat in a greased tin with a rolling pin.
  5. Put in the fridge for half an hour.
  6. Cut into bars and roll in castor sugar.
