- Beat egg whites at high speed or with an electric mixer at room temperature for 1 minute.
- Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves, about 2 to 4 minutes.
- Fold in chopped dates, flaked coconut, and chopped pecans.
- Drop mixture by teaspoonfuls onto a lightly greased cookie sheet.
- Bake at 350°F (175°C) for 15 minutes.
- Cool on cookie sheets.
- Store in a loosely covered container.
