Delightful date meringues combine crispy egg whites with sweet dates, coconut, and pecans for a nutty, chewy treat perfect for parties or afternoon snacks.

Ingredients

  • 2 egg whites
  • 3/4 cup sugar
  • 8 oz. pitted dates, chopped
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans

Instructions

  1. Beat egg whites at high speed or with an electric mixer at room temperature for 1 minute.
  2. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves, about 2 to 4 minutes.
  3. Fold in chopped dates, flaked coconut, and chopped pecans.
  4. Drop mixture by teaspoonfuls onto a lightly greased cookie sheet.
  5. Bake at 350°F (175°C) for 15 minutes.
  6. Cool on cookie sheets.
  7. Store in a loosely covered container.
