Date Nut Harvest Cake

Ingredients

  • 1 c. chopped dates
  • 1 tsp. baking soda
  • 1 c. chopped apples
  • 1/3 c. margarine
  • 1 1/4 c. sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  1. Pour 1 cup boiling water over chopped dates, baking soda and chopped apples.
  2. Mix well and cool.
  3. Cream together margarine, sugar and eggs; add vanilla.
  4. Add to creamed mixture alternately with date mixture.
  5. Bake in greased and floured 9 x 13-inch pan at 350° for 30 to 35 minutes.
