David'S Corn Bread

Ingredients

  • 1 1/2 c. flour
  • 3 c. corn meal
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 tsp. baking soda
  • 3/4 c. melted shortening
  • 3 beaten eggs
  • 1 c. hot water
  • 1 tsp. baking powder
  • 4 lb. unpeeled figs (ripe, but firm)
  • 3 1/2 lb. sugar

Instructions

  1. Wash the figs in lukewarm water.
  2. Discard water.
  3. Leave the skins on the fruit and a short portion of the stem so the juices remain inside the fig.
  4. (This procedure also helps figs retain their shape throughout cooking.)
  5. Place the figs inside a large bowl or pot filled with the sugar.
  6. Let stand for at least 24 hours.
  7. (Figs make their own juices, somewhat like strawberries.)
