Ingredients

  • 1 cup cooked rice
  • 1/4 cup butter or margarine
  • 3/4 cup molasses
  • 1 cup sugar
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 (9-inch) unbaked pie shell
  • 1 cup whole pecans

Instructions

  1. Cook rice until very soft, then drain and mash with a fork.
  2. Melt butter in a large saucepan.
  3. Stir in molasses, sugar, eggs, salt, vanilla, and mashed rice; mix well.
  4. Pour the mixture into an unbaked 9-inch pie shell.
  5. Sprinkle pecans evenly over the top of the filling.
  6. Bake in a moderate oven at 375°F for 50 minutes.
  7. Allow the pie to cool before serving.
