Ingredients

  • 4 lb. ground meat (3 lb. deer and 1 lb. beef)
  • 1/4 cup Tender Quick
  • 2 Tbsp. liquid smoke
  • 3/4 Tbsp. pepper

Instructions

  1. Combine the ground meat (deer and beef) with Tender Quick and refrigerate overnight.
  2. Next day, add liquid smoke and pepper to the mixture.
  3. Mix well until thoroughly combined.
  4. Mold the mixture into logs or sticks.
  5. Place on cookie sheets or cake pans.
  6. Cook in a preheated oven at 225°F for 4 hours.
  7. Cool completely before slicing or wrapping for freezing.
