Deer Shish-Kabobs feature tender marinated deer backstrap wrapped in bacon, grilled to perfection with rich flavors of Italian dressing, wine, and aromatic herbs, ideal for hearty outdoor meals.

Ingredients

  • backstrap of a deer, cut, quartered
  • 1 pkg. bacon
  • 8 oz. zesty Italian dressing
  • toothpicks
  • 2/3 cup dry red wine
  • 1/3 cup water
  • pepper
  • bay leaves
  • thyme
  • mustard seed

Instructions

  1. Marinate the deer backstrap with Italian dressing, wine, water, pepper, bay leaves, thyme, and mustard seed for 24 hours.
  2. After marinating, insert slices of garlic into the roast.
  3. Rub the roast with salt.
  4. Cook the roast in a 350°F oven.
  5. Baste with marinade drippings until the roast is browned and tender.
  6. Place the roast on a hot platter.
  7. Add a glass of current jelly, 1/2 cup sour cream, and 1 tablespoon brandy to the drippings.
  8. Stir over high heat until the mixture thickens.
  9. Garnish the roast with orange strips or slices and spiced pears.
