Crispy, golden fried okra with a savory cornmeal coating, perfect as a snack or side dish for those who enjoy Southern-inspired flavors and crunchy textures.

Ingredients

  • 1 lb. okra
  • Salted ice water
  • Yellow cornmeal
  • Salt, to taste
  • Black pepper, freshly ground, to taste

Instructions

  1. Wash okra well.
  2. Trim caps.
  3. Slice into 1/2 inch pieces.
  4. Soak in salted ice water for 15 minutes.
  5. Drain the okra.
  6. While oil is heating to 350°F, roll okra in cornmeal seasoned with salt and black pepper.
  7. Dredge only a few pieces at a time, making sure to coat each piece well.
  8. Drop small batches into hot oil and fry until okra floats and is crispy golden brown.
  9. Remove from oil with a slotted spoon.
  10. Drain on paper towels or absorbent brown paper.
  11. To keep okra warm while frying batches, place in a single layer on baking sheets lined with paper towels.
  12. Place baking sheets in a warm oven until ready to serve.
