Ingredients

  • 1 pkg. yellow cake mix
  • 3/4 cup apricot nectar
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 teaspoon lemon extract
  • 1 cup powdered sugar

Instructions

  1. Combine the yellow cake mix, apricot nectar, vegetable oil, eggs, and lemon extract in a mixing bowl.
  2. Mix until well blended.
  3. Pour the batter into a greased tube pan.
  4. Bake in a preheated oven at 325°F (160°C) for 60 minutes.
  5. Immediately turn out the cake onto a wire rack.
  6. While still hot, glaze with powdered sugar mixed with a little apricot nectar or water if desired.
