Ingredients

  • 1 medium-sized cauliflower (about 2 lb.), trimmed
  • 4 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon white vinegar
  • 1/2 cup Spanish salad olives, sliced thin
  • 1/2 cup Longhorn style mild Cheddar cheese, diced small
  • 1/2 cup salad dressing or mayonnaise
  • 1 scant teaspoon dried parsley flakes
  • 1/4 teaspoon nutmeg

Instructions

  1. Wash the cauliflower head.
  2. Place the cauliflower in a 2-quart pot with 4 cups boiling water.
  3. Add salt and vinegar to the water.
  4. Cook for about 6 to 8 minutes until crispy done.
  5. Drain the cauliflower.
  6. Rinse with cold water and drain well until free of water.
  7. Separate the cauliflower into flowerets and cut off excess stems; place in a large bowl.
  8. Add sliced olives and diced cheese to the bowl.
  9. Stir in salad dressing or mayonnaise.
  10. Add dried parsley flakes and nutmeg.
  11. Mix well and keep in the refrigerator until ready to serve.
