Delicious Cauliflower Salad
A vibrant cauliflower salad featuring tender cauliflower florets, briny olives, sharp cheddar, and a creamy dressing, perfect for light lunches or potlucks. Refreshing and flavorful.
Ingredients
- 1 medium-sized cauliflower (about 2 lb.), trimmed
- 4 cups water ⓘ
- 1/2 teaspoon salt
- 1 tablespoon white vinegar ⓘ
- 1/2 cup Spanish salad olives, sliced thin ⓘ
- 1/2 cup Longhorn style mild Cheddar cheese, diced small
- 1/2 cup salad dressing or mayonnaise
- 1 scant teaspoon dried parsley flakes ⓘ
- 1/4 teaspoon nutmeg ⓘ
Instructions
- Wash the cauliflower head.
- Place the cauliflower in a 2-quart pot with 4 cups boiling water.
- Add salt and vinegar to the water.
- Cook for about 6 to 8 minutes until crispy done.
- Drain the cauliflower.
- Rinse with cold water and drain well until free of water.
- Separate the cauliflower into flowerets and cut off excess stems; place in a large bowl.
- Add sliced olives and diced cheese to the bowl.
- Stir in salad dressing or mayonnaise.
- Add dried parsley flakes and nutmeg.
- Mix well and keep in the refrigerator until ready to serve.
