Ingredients

  • 5 cups rhubarb
  • 2 cups pineapple chunks
  • 4 2/3 cups sugar
  • 1 large box Jell-O (cherry or peach)

Instructions

  1. Put the rhubarb, pineapple chunks, sugar, and large box Jell-O in a bowl and refrigerate overnight.
  2. Transfer the mixture to a pan and bring to a boil.
  3. Simmer for 15 minutes or until tender. Turn off the heat.
  4. Add the large box cherry or peach Jell-O to the mixture and stir well.
  5. Pour the jam into jars and seal.
  6. Yields 2 large jars and 4 small jars.
