Ingredients

  • 5 medium yellow squash
  • 1 medium onion
  • 1 egg
  • 1 (6 oz.) package Mexican-style or regular cornbread mix
  • 1 (8 oz.) can cream-style corn
  • 1/2 cup chunky picante sauce
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil squash and onion for approximately 30 minutes or until tender. Drain and mash with a fork.
  3. Add the beaten egg to the mashed vegetables and mix well.
  4. Combine the vegetable mixture with the cornbread mix, cream-style corn, picante sauce, and softened butter. Mix thoroughly.
  5. Pour the mixture into a 1 1/2-quart baking dish.
  6. Bake for 50 minutes or until the top is set and golden brown.
