Instructions

  1. Sprinkle 3 tablespoons of graham cracker crumbs on the bottom of a 9-inch pie or cake pan. Set aside.
  2. Soften gelatin in 1/2 cup water.
  3. Add water to pineapple juice to make 3/4 cup.
  4. Bring the pineapple juice mixture to a boil.
  5. Beat the cottage cheese until nearly smooth, about 3 or 4 minutes.
  6. Add egg yolks, skim milk, lemon juice, sweetener, vanilla, and salt to the cottage cheese. Beat well.
  7. Blend in gelatin at low speed until combined.
  8. Chill the mixture until thick but not set, about 1 hour, stirring occasionally.
  9. Beat egg whites at highest speed until soft peaks form.
  10. Fold the beaten egg whites into the gelatin mixture by hand.
  11. Spoon the mixture over the graham cracker crumbs in the pan.
  12. Sprinkle the remaining tablespoon of graham cracker crumbs over the filling.
  13. Add pineapple tidbits on top.
  14. Chill in the refrigerator overnight before serving.
