Ingredients

  • 2 c. crushed pineapple
  • 2 c. pineapple juice
  • 1/2 c. lemon juice
  • 1 c. sugar
  • 3 envelopes Knox gelatine
  • 1 c. American cheese, grated
  • 1 c. whipping cream, whipped

Instructions

  1. Dissolve the gelatine in 1 cup of water and let it sit for 10 minutes.
  2. Bring the pineapple juice, crushed pineapple, lemon juice, and sugar to a boil.
  3. Remove from heat and add the dissolved gelatine to the hot mixture.
  4. Let the mixture cool until it is partly set.
  5. Add grated American cheese and whipped cream to the cooled mixture and fold gently.
  6. Pour the mixture into 12 to 14 individual molds and chill until firm.
  7. Serve with the accompanying dressing.

Tips & Substitutions

For a smoother texture, ensure the gelatine is fully dissolved before adding it to the hot mixture. If you prefer a dairy-free version, try substituting the American cheese with a plant-based alternative. To enhance the flavor, consider adding a pinch of salt or a dash of vanilla extract. This dessert can also be made in a larger mold instead of individual servings, just adjust the chilling time accordingly.

Serving Suggestions

This dish is delightful on its own, but it pairs beautifully with a light fruit salad or a dollop of whipped cream on top. For a festive presentation, serve alongside Nana'S Party Mix for a fun contrast in textures. Consider garnishing with fresh mint leaves for added color and flavor.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the mold in a warm water bath until it loosens slightly. Avoid using the microwave, as it may affect the texture of the gelatin. Serve chilled for the best experience.

Frequently Asked Questions

Can I use fresh pineapple instead of canned?

Using fresh pineapple is possible, but ensure it is well-drained to avoid excess moisture. Fresh pineapple contains enzymes that can affect gelatin setting, so you may want to cook it briefly before adding to the mixture to neutralize those enzymes.

How long does it take for the mold to set?

The setting time can vary, but generally, it takes about 4 to 6 hours in the refrigerator. For the best results, prepare it the night before serving to ensure it's completely firm and ready to be unmolded.

Can I make this recipe a day in advance?

Yes, this recipe is perfect for making ahead of time. In fact, making it the day before allows the flavors to meld and the texture to firm up nicely. Just store it in the refrigerator until you're ready to serve, ensuring it's covered to prevent any absorption of odors.
