Ingredients

  • 1 cup diced cooked ham
  • 1 (2 oz.) jar mushroom stems
  • 1/4 cup chopped onion
  • 2 tablespoons chopped green pepper
  • 2 tablespoons oleo
  • 8 eggs or egg substitute
  • 1/3 cup skim milk
  • 4 slices American cheese

Instructions

  1. In a 10-inch skillet, cook ham, mushrooms, onion, and green pepper in oleo over medium heat for 5 minutes.
  2. Beat together eggs, milk, salt, and dash of pepper.
  3. Add the egg mixture to the skillet with the cooked ingredients.
  4. Continue cooking over medium heat, stirring constantly, for 4 minutes or until eggs are cooked throughout but still glossy and moist.
  5. Place cheese slices on top of the mixture to melt during the last few minutes of cooking.
