Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 pint milk
  • 2 unbaked pie crusts
  • 4 cups mashed cooked sweet potatoes
  • 1 teaspoon salt
  • 1 teaspoon ginger

Instructions

  1. Preheat oven to 425°F.
  2. Make pie crust or thaw 2 pie crusts. Beat eggs slightly, then add remaining ingredients.
  3. Pour mixture into pastry-lined pie pan.
  4. Bake at 425°F for 15 minutes, then reduce heat to 350°F and bake for an additional 45 minutes.
