Ingredients

  • 1 1/4 cups cornmeal
  • 1/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup grated carrots
  • 1 tablespoon apple juice concentrate
  • 1 cup nonfat buttermilk
  • 2 egg whites

Instructions

  1. Preheat oven to 350°F.
  2. Use an 8-inch square nonstick pan or a regular pan coated with nonstick cooking spray.
  3. In a medium bowl, combine cornmeal, whole wheat flour, baking powder, and baking soda.
  4. In a small bowl, beat egg whites until foamy.
  5. Add the egg whites to the flour mixture and blend thoroughly.
  6. Pour the batter into the prepared pan.
  7. Bake for 20 to 25 minutes, or until the cornbread is springy to the touch.
