Deviled Crab Meat
Ingredients
- 4 Tbsp. oleo
- 4 Tbsp. flour ⓘ
- 1 c. milk ⓘ
- 1/4 c. cooking sherry
- 1 stalk celery, chopped ⓘ
- 2 Tbsp. green onion tops, chopped ⓘ
- 2 (7 oz.) cans crab meat ⓘ
- 1 1/2 c. soft bread crumbs
- diced whites of 5 hard-boiled eggs ⓘ
- 1 1/2 tsp. salt
- 1/3 tsp. dry mustard ⓘ
- 1/2 tsp. Worcestershire sauce ⓘ
- 1/8 tsp. cayenne pepper ⓘ
Instructions
- Make white sauce in double boiler with first 4 ingredients; add celery and onion.
- Gently fold in crab meat, bread crumbs and hard-boiled egg whites.
- Add remaining ingredients.
- Pour into greased casserole; top with buttered crumbs and bake 30 minutes at 375°.
