Ingredients

  • 2 1/2 c. sugar
  • 1/2 c. white Karo syrup
  • 1/2 c. water
  • 2 egg whites
  • 1 tsp. vanilla
  • 1/8 tsp. cream of tartar

Instructions

  1. Boil sugar, water, and Karo syrup until it will spin a thread.
  2. Beat egg whites stiff while syrup is boiling (not too dry).
  3. Pour half of the syrup over egg whites slowly, beating at 10 to 12 on the mixer.
  4. Let the other half of the syrup cook until it bubbles very thick.
  5. Pour this thick syrup over the first part and beat until stiff and cool.
  6. Do not spread on cake until it has cooled or it will be sticky.
  7. If it gets too hard, add a little hot water or sit the pot in hot water.
  8. If weather is pretty, add cream of tartar; if not, do not add, then add vanilla.
