Dolly'S Catfish Stew

Ingredients

  • 2 to 3 lb. deboned catfish
  • 1 can crushed tomatoes
  • 1/2 lb. finely chopped bacon
  • 1 large finely chopped onion
  • 6 peeled, cubed, boiled potatoes
  • hot sauce or 2 red peppers
  • salt and pepper to taste

Instructions

  1. Combine butts meat and chopped onion in the bottom of a large pot and sauté with a little grease.
  2. Add crushed tomatoes, deboned fish, and spices to the pot and cook on low heat for a while.
  3. If using red peppers, add them but remember to remove before serving to control spiciness.
  4. Allow the stew to simmer until flavors meld and it gets hotter and hotter.
  5. Can be frozen for later use.
