Juicy butterfly chops baked over rice with tomatoes, onions, and green peppers create a hearty, flavorful meal perfect for family dinners or casual gatherings.

Ingredients

  • 3 cups rice
  • 2 cans tomatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • salt to taste
  • pepper to taste
  • 10 to 12 butterfly chops

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, cans of tomatoes, chopped onion, chopped green pepper, salt, and pepper in a large baking dish.
  3. Lay the butterfly chops on top of the rice mixture.
  4. Cover the dish with a lid or aluminum foil.
  5. Bake for 30 minutes.
  6. Remove from oven, turn the chops over.
  7. Cover again and bake for another 30 minutes.
