Ingredients

  • 12 eggs
  • 2 cans (17 oz.) cream-style corn
  • 4 cups (1 lb.) sharp Cheddar cheese, grated
  • 2 (4 oz.) cans whole green chilies, drained and chopped
  • 1 Tbsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Preheat oven to 325°F.
  2. In a large bowl, combine beaten eggs, cream-style corn, grated cheddar cheese, chopped green chilies, salt, and pepper.
  3. Beat until well mixed.
  4. Pour the mixture into a 13 x 9-inch baking dish.
  5. Cover and refrigerate up to 24 hours if preparing in advance.
  6. Place in the oven and bake for 1 hour and 15 minutes or until the casserole is firm to touch.
